    How is this done?? It's driving me nuts...

    I'm not a PS pro so I don't know if there is an easier way... but when I did my car, I just selected everything around it and desaturated it all the way down...

    This is the easiest way. Just select what you want as color, invert selection and then either saturate down or easier is just switch it to grayscale.

    You can also use the magnetic lasso tool as well, that works if the colors are too similar that the magic wand wont differentiate

    Doesn't the Magnetic lasso tool work with color gradients aswell...

    Could also make a copy of the original layer in B/W and put the copy layer over the original and just erase whatever you want in color. Not the most precise methond but good for a quick job.

    I usually make a duplicate of layer, then desaturate the background layer. On the color layer, just select what you want in color. Depending on the pic, you might want to feather the selection. Then finally, just invert the selection and hit "del" or clear selection. Having 2 layers gives you more control.
    You have a couple of photos that are great... you must be very good at photoshop!

    for a more natural look, you can
    desaturate
    click on history brush
    open the history tab, click the little box left of the step BEFORE desaturation
    then just paint normally the things you want color

    you can change how precise magnetic lasso tool is so you can get a big gradient or be really precise...
