    Decided to rip a Paella today, but did it a bit differently.

    Started by grilling some chicken thighs over direct heat on the Kamado, seasoned with a Spanish tumeric paella spice salt and pepper. Grilled off some shrimp while I was at it.

    Rendered out some chorizo for fat and flavour, then cooked down some onions, garlic, Roma tomatoes, and green beans.

    Finished the whole thing up on the Kamado with chicken stock, calrose rice ( no bombas on hand) and a healthy dose of saffron and paprika.


    Really happy with how it all turned out. Had a few more pictures but system wouldn’t let me upload.

    I liked the lack of cleanup. No slpatter mess on the grill that would have been present in the kitchen.

    Will admit. Keeping the lid open while doing this just ATE charcoal. I had to re up between grilling the chicken and peppers and the pan.

    The dish seems exotic. But it was actually dirt cheap for the amount of food I made, even with the shrimp added (which kind of sucked imo, seafood in Calgary… ).

    I just ate a few of those Takis things and then looked at the bag. Holy shit, this is not food!
    29 ingredients with #18 being Silicon Dioxide meaning there is more of that than 11 other things. Literally more Silicon Dioxide than pepper...
    Oh, and they're made in Mexico!

    Time to make dinner, LoL!
