Good free software for recording pc mic to mp3

Hey, can you guys recommend some good free software I can use to record my microphone to a mp3? Something small and light that I don't have to install would be ideal (like just an executable would be awesome).

Audacity is still the best truly free application. No degraded quality and a decent selection of editing tools. Dont forget to install the LAME MP3 encoder. Its under a separate license so must be installed separately.

Definitely Audacity - did 48 hours of cassette tapes to MP3 recently with it.

You didn't say what platform, assuming Windows on a laptop?
Audacity on a PC is great.
Voice Record Pro in an iPhone is also very good for the task you described, if you have enough storage.
