The Cosmopolitan is certainly the best. It's incredible.
Mandalay Bay is the best choice if you really like your time at the pool.
Rough ranking from where I've stayed or been into the rooms of:
Cosmopolitan > Vdara > Mandalay Bay > MGM Signature > Venetian > Wynn Encore > Treasure Island > NYNY > Tropicana > Planet Hollywood > Luxor >> Excalibur >>> Linq.
In Fremont the Golden Nugget is very nice and its Rush Tower is also nice and modernized.

Wynn is my fav overall. A bit further down the strip but has some of my favourite restaurants (Peking duck @ wing lei and mizumi, buffet). Tables also seem to be quieter than other hotels and the dealers are all very good. Easy access onto spring mountain blvd for Chinatown food runs

I've stayed just about everywhere on the new strip, and MGM is my usual go to. Like others have said, it's essentially just because the pool is a good spot. They also have a good food court for quick lunch meals. I'm not concerned about walking distances as I don't walk anywhere that's far anyway. Just hop in an Uber.
Got back from 7 days at the Luxor last week, definitely warrants the 3.5 star rating, tons of kids 2nd hand smoking in the casino. Great pool, tons of room, no MGM pool but still great for wading and sunning. The room was plenty fine and the shower almost skinned me alive, fierce power, guard your walnuts! Blue Man Group was fucking awesome, and the Titanic exhibit was remarkable and a bit chilling. This was my 7th time to Vegas in the past 12-ish years and mother of mercy have prices skyrocketed, used double the spending money than any other time. In Vegas it barely felt like COVID ever existed aside from staff at all restaurants/stores/hotels still masking up. Getting down there required a bit more prep with the 24 hour COVID test (what a joke, so easy to fake) and the ArriveCAN info to fill out coming back but not a big deal. Airports flowed smoothly, didn't need to be there 3 hours early but maybe that's why we got through so quickly. Flying on a Wednesday isn't only the cheapest but neither flight was full so we had a spare seat next to us both ways. Anyhow, for anyone thinking of going in the near future hopefully this info helps give you a feel for what to expect.
I bet the most expensive part was arranging the time machine to get you back to 2001 for the Luxor and BMG.
I think if I did 7 days in Vegas I would be dead

7 days is physically fine for us, we never get blackout drunk and we sleep 10 hours a night plus a nap after the pool every day, elderly folks in training.
We went for 10 days once and it was definitely too long!
10 days in Vegas is pretty baller too. I have a very high burn rate there even without any debauchery. Everything is expensive.

Keep in mind, it's not like an architect was like "hmmm elevators are so lame, they just go up and down. What if we put them on a 45* plane?" They are just there to enable the overall concept/aesthetics of the inside of the building. It wouldn't be the same with normal elevator shafts floor to ceiling, and ped walkways connecting to the outer edges or something shitty like that.
I think the Luxor has aged remarkably well actually. It remains a pretty cool building, and the fact that it hasn't been demolished for something bigger and better (yet) probably speaks to that a bit.

That's really not that long ago and it seems like old balls already! That's been an embarrassing place to stay for more than a decade.
I'm no fan of Luxor, but I agree it's certainly aging better than Excalibur.
