    Took the wife out for early V-Day dinner at Ryuko. Second time there and still think they have absolutely fantastic fish that's on-par with some Japanese sushi restaurants we visited in June.

    We ordered the Hokkaido scallop and tartare to start. Scallop quality was great, sauce that it was swimming in was too much. Interesting take on tartare but neither one of us liked it that much as there were too many bold flavours competing, competing textures, and the beef was surprisingly chewy and sinewy. For wagyu beef this was a huge let down. Cassis still reigns supreme with tartare and I don't think that will ever change. The cocktails were nice but too sweet for my liking.

    But the star of the night was exactly what I expected - the fish. We each ordered a premium set which is comprised of 8 different sushi, some dry-aged. Each one was executed perfectly.

    The service at Ryuko is courteous albeit very slow. The quality of the fish they have here is excellent. For a Korean sushi restaurant, they do sushi exceptionally well in my opinion.

    I have to go back to Zipang but I'm going to reach out and say Ryuko has nicer quality fish (but it's definitely more expensive so there's that). Quality is same/similar with Ari, and I like the Japanese vibe of Ari more.

    Couldn't say. I believe Ari is, Zipang definitely is not.

    We did the bento at Ryuko and it was a delightful experience. Been to Ari also and it was positive experience as well. Love both places!

    Was in Calgary for training for a few days. Spent 2 dinners at Honjin and 1 dinner at Ikusa. Didnt get a chance to hit up Ryuko or Ajito. Server told me they're all run by the same owner?

    Honjin was yum, Ikusa not so much

    I didn’t mind Honjin, but the bill put it into a range where I would eat elsewhere

    Is Honjin the one near Chinook Mall?

    Yeah, over the Tokyo st market. I am happy it exists though. Feels like a very approachable place for people that are diving deeper into new foods (basically the entire reason for kinjo so very on brand)

    They’re definitely doing something right. Tokyo St Market or the Kinjo in Harvest Hills are always bumping

    Home wing night.

    Sous vide at 160 for an hour, dried off and AirFried(tm) in the convection oven at 550 until both sides crisp and rendered.

    Tossed in a homemade Sweet Buffalo sauce, made of honey butter and Valentina extra hot.

    One admission, imo doing them sous vide was a waste of time.

    I get just as good if not better results roasting them or smoking them directly.

    Basically the only reason I would do it again, would be it was a very convenient way to par cook them from frozen, with under 10 minutes in the oven to finish after that.

    So if I had to make 10 lb of them or something that would help a lot.

    Basically, same reason restaurants sous vide things.
