    Damn... This pretty much summarizes my thoughts. I used to be a Modern diehard but things have gotten a bit worse over the last year or so.

    Charcut has a decent steak, id put it under Hy's and Modern.

    A darkhorse for excellent meats including steaks IMO is the Guild. They do an unreal braised short rib.. I know I know not a steak but worth trying.

    I’ve been to Vintage, Modern Steak, Hy’s, Caesars, Chop House, Char Cut, & even the Keg lol.

    I dropped $1000 plus dollars one night at Modern Steak for some clients ( 3 people total) and I was not overly impressed.

    Every restaurant I've ever enjoyed that has expanded their business, turned to shit. Well, maybe not shit, but definitely lowered in quality of food, service and/or ambience enough to turn me away.

    Of all the places I enjoyed best in Calgary, it was probably Vintage.

    You go to steak places to be lazy and maybe social ambiance. The food quality is secondary and sometimes tertiary. Sad but true.

    Never, ever consider something I say to be aligning with 89coupé, but how is a big, thick Amarone an inappropriate choice for a rich, thick steak?
    Are you arguing that it doesn't have enough tannins? It's not like it was paired with a room temp Pinot Grigio!

    Yeah, a wine with more tannins would be better to help cut the richness, but when it comes to pairings you can compliment, or contrast with the food, so it’s hard to say something is “wrong”… but, an amarone is an “after dinner” wine, it does not pair well with food in general by its natural, when we are talking about air dried, concentrated grapes it’s bordering on a desert wine and is not something I would select for this situation.
