I did a light French on the drumsticks which was also quite nice, made them super easy to eat and a cleaner presentation.

I know that for BBQ and smoking that using real wood really isn't all that popular but for those that might be interested, we have a fairly consistent supply of white oak barrel pieces/chunks that we'd give away - through my wife's retired whiskey and wine barrel business we end up with a lot of cutoffs. Most of it comes from whiskey barrels but we do also have a more limited supply of red wine oak barrel pieces as well.
We used to burn it in our fire pit but lately weren't using the fire pit enough to keep up to the supply we are creating - so much so that early this spring we gave one customer about 2 cubic yard's of whiskey barrel cutoffs. It burns hot, doesn't spit and creates very little ash - with the Halloween season approaching we are again going to have an increased supply of scrap white oak.
Message me if you're interested, please be aware that the whiskey oak is highly flammable as I found out completely by mistake 2 weeks ago when some errant sparks landed in a barrel full of cutoffs and I all of a sudden had an unexpected fire in my detached garage.

You can either treat it as picanha or brisket, so shorter slightly higher temp smoke like picanha or low and slow like brisket.
I rolled with the picanha style smoke and was happy with the results, I'd take picanha over tri tip but since it was on sale, no ragrats
There was an article a few pages back about a metal bristle fucking up a guy, have been meaning to move away from the one I used and came across these at Walmart the other night.
Palmyra wood bristles, was 5 bucks for the standard BBQ brush style and 6 bucks for the bigger one. Pretty cheap overall, see how they hold up
