Asides from the packaging? not really. Most of the shit available at the souvenir shops comes in fancy cases, and its $$$$ for next to no portions. I've never noticed any noticeable difference between that, and the mass market stuff in bulk (not so fancy) containers.

Depends who you ask. I can't tell the difference, unless it's marketed as a flavoured maple syrup. It gets to be like wine and you can do tastings and do disgusting things one should never do to food with your mouth. There's definitely difference of colour from light to dark when looking at maple syrup. There's probably a difference in sugar content, viscosity, etc.
But as with all food items, I'd say it's best fresh from the manufacturer versus stuff sitting on a shelf for months / years. Gummy worms have such a property as well.

I buy the what's supposed to be legit maple syrup from Costco, pretty tasty
+1 For the Costco maple syrup, it's delicious and cheap.
Canadian maple syrup has to comply with CFIA regulations. Including the Maple Products Regulations. I can only contain maple sap or maple product dissolved in water. American maple syrup can be cut with other syrups. It also is graded as Canada No. 1, 2, or 3.
