It seems I struck a nerve on the Ukrainian food thing. My wife just laughs. It's just a food preference thing - it's subjective. I just don't dig plain potato dumplings, beat soup, and boiled cabbage.
Maybe it's because my family is Ukrainian/Russian. But I love all those things.

Seriously though, that is only three dishes and you hit the nail on the head when you said "plain potato dumplings, beet soup and boiled cabbage". If that is what you have experienced it is no wonder why you are disappointed haha! All three are made quite radically different from family to family with passed down recipes that go way back, so quality and flavours do vary for sure, and some families are quite frankly, just awful cooks while others are not.
For example, we only use fermented cabbage in our house for cabbage rolls and none of the plain boiled stuff. We also make many varieties of pirogies from potato and cheese to fermented cabbage to prunes and everything in between. One of my favourite dishes ever since being a kid is Nachynka. It is sort of a spoonable cornbread (casserole thread? lol) that is all butter, cream, eggs and onions but you can tweak it all over the place (bacon and mushrooms always goes well!) and lotsa weird shit like studenstz (jellied pork hock meat sounds gross but is delish!). On Christmas mom and Granda would always make kutya which is another fave of mine. It is a super nice sort of whole kernel wheat porridge where the kernels are soaked and cooked until they burst and mixed with honey, poppy seeds and walnuts. Deruny (potato pancakes) are made in so many different ways, Paska Easter sweet bread, Chicken Kiev (I mean come on!)
The list goes on and on and on but if you just focus on a couple dishes that you have had that were not maybe the nicest recipes you will always be disappointed in any cuisine... Not just Ukrainian.
Yes, I am overly defensive haha! Seriously though, absolutely preferences vary so of course not everybody is going to love everything, but I always like to be that guy to convert haters by cooking dishes they always assumed would be gross in a way that surprises them.
My grandpa is Ukrainian, we had loads of good, homemade Ukranian food at Christmas wayyy back when I was a kid. However comparatively speaking, it's very low on my list of delicious cuisine. It rates only slightly higher than British food.

Ultimate white guy Christmas tradition in our house that has noting to do with Ukrainian food. Christmas Morning Wife Saver! It could cross over the the casserole thread too. My mom made it as long as I can remember, my wife learned it from our first Christmas together and our adult children demand it every year. We even sometimes make it for dinner! Super whitey foods... Eggs, bread, cheddar cheese, onions, ham, spices all topped with cornflakes. Anything topped with cornflakes gets to be called white guy food!

Ukrainian food may not be fashionable or IG worthy to your Starbucks friends but it will get you through a nuclear winter. The rest of the world is wasting away and you will be holed up somewhere getting fat and likely the only reason white people survived settling the Canadian prairies.
